BopNgrill of Rogers Park is a favorite spot for students who go to Loyola University Chicago. For years the restaurant has had the pleasure of serving students in search of a good meal, but the business has had to make adjustments during the pandemic.
Some of the adjustments that they had to make were making sure that anyone who walked into the building to wear a mask and limiting the dining capacity to about 25%. But with the city of Chicago now loosening its COVID-19 restrictions on restaurants, the staff is confident the business will soon return to normal soon.
"We are very optimistic in our chances of returning to a normal business year around at least the summer of 2021, and once everyone gets their vaccine we will be very happy to welcome a full capacity crowd back with no mask mandates," said John Stuart who has been a manager for two years.
However, they are concerned that returning to normal might end up being longer than they expect because of uncertainty with the new COVID-19 variants that are showing up in the United States and the rest of the world.
"There is still some worry about these variants of COVID-19 that are popping up all over the place but we are still confident that the vaccine will do its thing and that we will start to see not only our business go back to normal but the surrounding area of Rogers Park also," Stuart said.
Despite the worries, Loyola students are ready for the day when they can go back without worrying about COVID-19 and just have a fun time with their friends.
"Once this pandemic is finally behind us, I am going to celebrate like I never had before with my friends and we are just going to just completely let everything that we have stored during this pandemic out of our bodies," said Meredith Frothingham, who is a regular customer.
